LongBottom Meats was born out of equal parts frustration and love. Frustration with grocery store “butchers” who couldn’t tell a ribeye from a roast, and love for the art of really good meat.

Founded in 2023 in Rock Hill, South Carolina, LongBottom is a family-owned boutique butcher shop built for people who actually care what goes on their plate. From hand-cut steaks and custom dry-aging to housemade sausage and fresh seafood, everything here starts with one simple idea: if it’s not the best, we’re not selling it.

The guy behind LongBottom Meats isn’t new to the game. He also owns BearWalrus, one of Rock Hill’s favorite spots for bold, chef-driven food — so he knows what quality looks (and tastes) like.

LongBottom was his way of bringing that restaurant-level quality straight to the community. The shop quickly became a local favorite for chefs, home cooks, and grill-obsessed dads alike. If you’ve eaten an unbelievable steak at a Rock Hill or Charlotte restaurant, there’s a good chance it came from here.

We believe everyone deserves access to restaurant-quality meat, expert guidance, and a place where you can talk about marbling without getting weird looks.

We handpick every product that comes through our doors, working with trusted farmers and purveyors to ensure consistent quality, ethical sourcing, and flavor that’ll make you forget whatever you used to buy at the grocery store.

No corporate middlemen. No frozen “prime-ish” cuts. Just local folks, cutting meat the old-fashioned way, with skill, care, and a little attitude.

We keep it simple:

  • Source the best. We work with regional farms and purveyors who take pride in their product.

  • Cut it right. Every steak, chop, and roast is trimmed by hand.

  • Age it properly. Our in-house dry-aging cooler runs constantly, developing flavor and tenderness.

  • Keep it local. We love Rock Hill, and we’re proud to serve its restaurants, families, and backyard pitmasters.

We’re not just another butcher shop, we’re a community of meat lovers who don’t take themselves too seriously, but take their craft dead serious.
